What a LONG winter it has been. Here in NW RI we have been under a blanket of snow that appears to not be going anywhere fast. It is early spring and this is the time of year when one starts to prepare for the growing season, kidding, etc...kind of tough this year. It snowed a whole bunch last night...
However, spring is still awesome, even under a cover of dirty white snow. We have pregnant does that are due very soon and I will make sure that once they are born, the pictures will be abundant! Stay tuned for that! This is also the first year that Dan has tapped the maple trees on our property. They were clearly marked in the fall while the leaves were still on them and now that early spring has arrived (yeah, right), 10 trees out of the marked 30 were tapped for sap about 3 weeks ago. As of today we have totaled 13 gallons of sap! This is very exciting! Today the sap is boiling down...I will let you know how much syrup we get from all this sap. The garden is still resting, hopefully the snow will melt soon and we can watch the new growth begin. I have been busy indoors as well, making oats balls (Dan currently working on a better name for them) for our breakfast or morning snack at work, freezing juiced and "bulleted" kale, spinach and whole lemons so I can make my smoothies a little quicker in the morning. I am working on a Nothing Wasted thing where I try to use up stuff to its full potential. The organic lemons I juiced are a good example. I cut off the very ends of the lemons and placed those in a mason jar and filled it with white vinegar to make my daily cleaning product. The juiced whole lemons will be used in my smoothies or just in a glass of warm water for my morning drink - that is a great way to start your day, the lemon water helps cleans your system and liver and get you ready to digest your food for the day. The pulp from the juiced lemons will go right into the compost pile where the chickens will pick at it and then get composted. #nothingwasted. I have been working on yoga classes for my fabulous students and doing workshops as well. Meander on over to the Summit Valley Yoga tab for more info on that and to watch for upcoming events! Enjoy the pictures and stay warm and dry. Happy Spring!
